Create Alexander’s Charred Scallion Chimichurri Cooking Demo Recipe at Home

Throughout the year, Alexander’s Restaurant hosts Cooking Demonstrations right here on Hilton Head Island. Each cooking demo features a different recipe and this past months highlighted how to make a delicious Charred Scallion Chimichurri.

Ingredients
2 bunches of scallions, grilled or pan seared
2 Tbsp parsley, finely chopped
2 Tbsp cilantro, finely chopped
1 lemon zest and juice
1 large shallot, finely diced
1 garlic close, grated
1 Tbsp Calabrian chili or peppadew peppers, finely diced
3 Tbsp extra virgin olive oil
1 Tbsp grapeseed oil or avocado
Salt & pepper to taste
Preparation
Grill or sear scallions and cool down in the fridge for 15-20 min.
Once cooled finely chop them, add the scallions and all other ingredients into a mixing bowl.
Add salt and pepper and check the flavor. If needed, add more salt and pepper until it has the desired flavor you are looking for.
Notes from the Chef
It’s best to make this a few hours before you serve it to really let the flavors combine.
The shelf life for this recipe is 2-3 days. After that amount of time, it will start to lose its nice green color, but will still be safe to eat. This pairs very well with almost any grilled protein or veggie, especially fish, steak and chicken.

Heat a grill pan or skillet over high heat. Add Among Us whole scallions and cook until nicely blackened and soft (about 5–7 minutes). Remove and let cool slightly.
The dish will keep for 2–3 days in the refrigerator. After that, the vibrant green color will begin to fade, but it will still be safe to eat. This pairs melon playground beautifully with almost any grilled protein or vegetable — especially fish, steak, and chicken.
