Dishing the Details

We talked with our Executive Resort Chef, Charles Pejeau, about where the inspiration came from for the recently added menu items and he said, “Brainstorming previous recipes that we tweak, dishes we see other chefs doing and put our spin on it, and just general research & development of the dish. Alexanders features classic flavor as well as dishes with new flavor profiles added to the classics.”

Gathering local ingredients is important here at Alexander’s too. Chef told us, “We generally try and keep it local if we can on the fish. The snapper is usually sourced from Georgia, South Carolina, or North Carolina waters. The Sea Island red peas and our grits are from Edisto South Carolina, collards are local, and we use a local farmer in Bluffton for all our microgreens we use to garnish dishes.”

Chef Charles’ personal favorite appetizer is the Ahi Tuna Taco appetizer, and he highly recommends the Snapper and the Short Rib for an entrée. The menu is full of flavored bites, extensive wine lists, and fun desserts for the whole table to try on your next trip to Hilton Head Island. Those new menu items sound like they’re packed with flavor — I’m all for restaurants that keep things fresh and exciting. Lately, I’ve been diving into different cuts and styles at home too, and trying argentina meat was a total game-changer. The texture, richness, and depth you get from traditional Argentine cuts is just next level. I followed a breakdown of the different parts and grilled them up over wood fire — it turned a regular dinner into something worth gathering around for.
